La Cornue Range Repair in San Diego
A La Cornue is a hand-built French range, assembled to order with brass trim and enamel panels, and there are not many of them in San Diego. Mechanically they are simpler than they look: gas burners, a vaulted oven, a thermostat and a set of very heavy doors. The complication is parts, not diagnosis.
What La Cornue builds
La Cornue builds the Château at the top of its range, with the vaulted oven ceiling that circulates heat rather than blowing it, alongside the smaller CornuFé models and the Grand Palais. Everything is made to order in France, in a chosen colour and trim, which is why owners keep them for decades and why a scratched panel is a bigger problem than a failed thermostat. The working parts, burners, valves, thermostats and elements, are conventional and testable.
What we are called about
Burner will not light, or lights unevenly
The spark electrode, the seating of the burner cap, or a partly blocked port. On a range this heavy the caps and rings have to sit exactly right, and a cleaning that puts one back a fraction out produces a flame that will not carry round.
Oven running above or below the set point
The thermostat or its sensing bulb, and on the gas ovens the safety valve. The vaulted oven holds heat differently from a convection cabinet, so a proper check uses a probe at the centre of the cavity rather than a reading taken at the door.
Door dropping or not sealing
The doors are heavy and the hinges and springs carry that weight every time they are opened. As they wear the door sits low, the seal stops making contact and the oven loses heat along the top. Adjustment often solves it before any part is needed.
Electric oven element failure on the Château
The elements themselves are conventional and testable, but they are specific to the model and ordered from the importer. That is worth knowing early, because on this brand the wait is the significant part of the job rather than the fitting.
